Introduction

Number of Servings: 8

Ingredients

    2 boneless, skinless chicken breasts
    5 slices ginger root

    1 lb whole wheat spaghetti

    4 large scallions, sliced
    .5c low-sodium broth
    2T rice vinegar (no salt, no sugar)
    4T natural creamy peanut butter
    1t sesame oil
    .25t asian red chili powder
    3 cloves garlic, pressed




Directions

Start water for pasta.
Microwave chicken breasts with thinly sliced ginger root until cooked through. Set aside.
When water is boiling, add pasta and cook until al dente. Run under cold water in a collander to remove starch.

In a bowl combine broth, vinegar, peanut butter, sesame oil, chili powder and garlic. Toss peanut sauce with cold pasta.

Slice chicken into bite-size pieces. Toss chicken, ginger, and scallions with pasta. Garnish with sesame seeds.

Serves 8.

  • Wow-just made this for dinner tonight and it is in the fridge chilling. Tastes fantastic! I added a cup of lightly stirfried snow peas, and a cup of shredded carrot (raw) and I used Thai spicy peanut sauce instead of the peanut butter. These additions stretched it to 9 portions. - 6/11/09
