*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup
Olive Oil, 1 tbsp
Salt, .5 tsp
*Lemon Juice, .25 cup
Red Ripe Tomatoes, .5 cup cherry tomatoes
Cucumber (with peel), .5 cucumber (8-1/4")
Parsley, 1 cup
Scallions, raw, .5 cup, chopped
Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, tomatoes, cucumber, green onions, and parsley. Stir in cooled quinoa.
