Turkey Chick Pea Chili

Ingredients

    1 T plus 1 tsp. olive oil
    1-2 lbs. boneless, skinless turkey breast, cut into 1/2-inch chunks
    1 large onion, cut into 1/2-inch chunks
    3 cloves garlic, minced
    1 green bell pepper, cut into 1/2-inch-wide strips
    1 lbs (about 2 large) sweet potatoes, peeled and cut into 1/2-inch chunks
    1 T chili powder
    1 tsp coriander seed, ground (or ground coriander)
    1/2 tsp salt
    1/2 tsp oregano
    1 1/2 c. water
    1 can (15 oz) crushed tomatoes or tomato puree
    1 can (15 oz) garbanzo beans (chick peas), rinsed and drained

Directions

Heat 1 T oil in Dutch oven over medium-high heat. Add turkey and cook until lightly browned. Remove and set aside.

Add 1 tsp oil, onion, and garlic to Dutch oven. Cook, stirring frequently, until onion is golden brown, about 5 minutes. Add bell pepper and cook until crisp-tender, about 4 minutes.

Add sweet potatoes, chili powder, coriander, oregano, and salt. Stir to coat. Add water and bring to a boil. Reduce to a simmer, cover, and cook 5 minutes. Add tomatoes and beans, cover, and simmer until sweet potatoes are fork-tender (10-20 minutes).

Return turkey to Dutch oven, cover, and cook until turkey is cooked through, about 10 minutes.

Makes 10 one-cup servings.
