Quinoa w/vegetables (2 cup serving)

Introduction

I love the texture and taste of these ingredients together; first time trying out. I love the texture and taste of these ingredients together; first time trying out.

Ingredients

    One bag (487 grams) Quinoa (cooked & cooled)
    1 med. Yellow Bell Pepper (diced)
    1 med. Red Bell Pepper (diced)
    1 med. Green Bell Pepper (diced)
    2 Jalapeno Peppers (diced w/seeds)
    1 bulb garlic (minced) (taste preference)
    1 tbsp. cilantro
    2 tbsp. extra virgin olive oil

Directions

Cook Quinoa, then cool; while waiting for Quinoa to cool down, prepare all other ingredients.

Toss all ingredients together; can be eaten right away, but tastes better after refrigerated for at least two hours.

Makes approx. 5 - 2 cup servings.
