Seitan Sausages (Vegan)

Introduction

This is a basic framework recipe for seitan sausages (a la Julie Hasson) for the purpose of tracking calories. There are also various spices added, depending on the flavor, but they have a minimal impact on the macro nutrient information.

These freeze really well and thaw quickly, so make a whole batch, or several, and stash in your freezer for quick meals and snacks.

Again, this is a base recipe. You must add spices to flavor them, please don't make this as-is or you will be disappointed!

Ingredients

    2 1/4 cups Vital Wheat Gluten
    1/4 cup Chickpea Flour
    2 tbsp Nutritional Yeast
    2 tbsp olive oil
    2 tbsp low sodium soy sauce
    2 1/4 cup water

Directions

Place a medium or large sauce pan with a lid over medium heat. Add about 1/2 inch water and a steaming basket (take care that the water does not actually rise above the bottom of the steamer basket). Bring to a boil while you make the sausages.

Mix together all dry ingredients, including any dry spices you are adding, in a medium bowl.

Mix together all wet ingredients, including any additional wet flavorings (take care not to add more than a couple tablespoons additional liquid, or reduce the water accordingly).

Mix the wet into the dry until completely combined. Divide into 8 pieces. Roll each piece into a section of aluminum foil and roll up like a tootsie roll.

Once all the sausages are wrapped place them in the steamer basket, distributing as evenly as possible. Cover pot with the lid and steam 30 minutes, rotating the saugages half way through.

Remove sausages from pot and set aside until cool enough to handle. Then unwrap and allow to cool completely before storing in the fridge or freezer (wrapped tightly).
