Carrot Salad

Introduction

I love all these ingredients, but when it comes to making this salad I can't bring myself to adding mayonannise to the equation. I found this recipe about 20 years ago. The original recipe added sugar, but if the carrots are fresh, it isn't needed. If, after it sits for 1/2 hour you still think it needs sweetness, add 1 Tbsp Splenda, or to taste. Ingredients

    1 pound carrots, grated
    (or about 4 cups)
    1 cup (9 oz can) Crushed Pineapple, in juice
    1/4 cup raisins

Directions

Grate carrots and place in bowl with pineapple, undrained, and raisins. Mix together and refrigerate for 1/2 hour or until needed.
