Savory Summer Stir Fry

Introduction

You could substitute whatever fresh vegetables you have on hand for this. I used a pattypan squash, broccoli and greens from my local CSA. You could substitute whatever fresh vegetables you have on hand for this. I used a pattypan squash, broccoli and greens from my local CSA.
Number of Servings: 6

Ingredients

    Summer squash, 1 cup, chopped
    Swiss Chard, 3 cup, chopped
    Broccoli, fresh, 4 cup, chopped
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 2 clove
    Olive Oil, 2 tbsp
    Worcestershire Sauce, 1 tsp

Directions

Chop all vegetables first.
Parboil broccoli -- dip in boiling water and fish it back out after 10-20 seconds

Saute onion, garlic, broccoli stems and squash in olive oil. When onion is soft, add worcestershire sauce or other seasonings.

Add chard and broccoli. Saute for 1 minute. Cover for 1 minute. Uncover and saute until broccoli is tender but not overcooked.

Serve as a side dish.
