Peanutty noodles

Ingredients

    1 package whole wheat pasta, cooked
    16 oz boneless skinless chicken thighs
    2 green onions chopped
    1 bell pepper, chopped
    3 garlic cloves
    6 TBSP peanut butter, chunky
    6 TBSP soy sauce
    1 Lb sugar snap peas
    1 C edamame
    Cilantro to taste

Directions

Cook noodles according to package. Rinse and drain and place back into large pot.

Stir fry chicken. Drain all fat and then add the onion and garlic. Stir fry until soft then add the rest of the vegetables. Cook until soft about 5-7 minutes.

Mix soy and peanut butter in a small pan heated on the stove. Once melted, pour over noodles. Add vegetables and mix. Cut cilantro for the top.

May serve with chopped cucumber as well to make this more of an authentic Thai dish.
