Stuffed Shells

Ingredients

    1-14oz block of Firm Tofu
    1-10oz package of spinach
    1 Tbls Garlic Powder
    1 Tbls Basil
    1 Tsp Salt
    1 Dash of Pepper
    16 oz Shredded Mozzarella (Part Skim)
    3 Cups Vodka Sauce
    12oz Lasagna Noodles

Directions

Cook lasagna noodles according to package instructions.
Wilt spinach in a pan.
Blend tofu, garlic powder, basil, salt, pepper and mozzarella.
When noodles are cooked, stuff with tofu mix and roll.
Place in oven safe dish and pour vodka sauce over it. Bake in 350 degree oven for about a half hour.
