Meat Loaf Parmesan II

Introduction

This is adapted from "The Busy Mom's Make It Quick Cookbook" (although with the prep and cooking time- I wouldn't call it quick- ha, ha). The original recipe calls for 1 1/4c nonfat Parmesan cheese. I couldn't find nonfat Parmesan and even just putting in 1 cup, all you could taste was the cheese. So I've decreased that. I also think I will change it to make it firmer next time. It was somewhat soft. The original recipe called for 2 lbs of lean gr beef, but claimed that it only made 6 servings and it only had 286 cals/serving. Impossible! The servings were enormous and when I entered them here it came to over 400 cals. So I made it 10 servings- which is plenty for a helping. I added the celery, too.

* * I accidentally added the topping into the main loaf and thought it tasted great, but you might want to add some seasonings.

Ingredients

    1 lb lean ground beef
    1 lb ground chicken
    1/4 c egg substitute
    3/4 c lowfat Parmesan Cheese
    3/4 c diced onions
    3/4 c diced red pepper
    3/4 c diced celery
    1 c dry bread crumbs
    3/4 c nonfat half & half
    ~~~~~~~
    1/2 c ketchup
    2 Tb horseradish
    2 Tb lemon juice

Directions

Preheat oven to 350 degrees F.
Line a baking pan with foil and spray with cooking spray. Combine beef, chicken, egg substitute, Parmesan ch, onions, red pepper, celery, bread crumbs, and half & half. Mix well. Make a loaf shape on your baking pan; bake for 45 - 50 mins.
Combine ketchup, horseradish, and lemon juice and spread over loaf and bake another 15-20 mins or until cooked through.
