Thin Crust Skillet Pizza

Introduction

This is a slimmed down version from Cooks Magazine. You can change toppings as you please, but note: sauce is not cooked on this pizza! You can make it separate and dip if you like. Ingredients

    1 cup flour
    1/2 teaspoon baking powder
    1/2 teaspoon sugar
    1/2 teaspoon salt
    1/3 cup beer
    3 tablespoons olive oil
    30 slices pepperoni
    4 oz part skim mozerella

Directions

Mix flour, salt, sugar, baking powder, beer and one tablespoon olive oil together to make the dough. Let rest while you collect your topping ingredients, and heat one tablespoon olive oil in a large heavy skillet. After dough has rested for 10 minutes, devide in half and roll out a bit bigger than your skillet--it will shrink a bit when you lift it up. Use flour as needed to prevent sticking. Placie it in the hot oil in the skillet, and let it cook 3--5 minutes (med heat) until the bottom is done and golden in areas. Prick any bubbles with a fork. Flip it over, and and 15 pieces of pepperoni, and half the cheese. (or other toppings as you please). Cover and cook until the cheese is melted, and the bottom is done and golden. Slide out onto a plate, heat the last tablespoon of oil, an the second piece of dough rolled out as you did the first.

Serves 2, very generously.
