Egg Product - Devel's Develled Eggs

Introduction

Number of Servings: 16

Ingredients

    4 Beets
    8 Large Eggs
    2 Tblsp mayonnaise
    1.5 tbsp chives, chopped finely
    1.5 tbsp tarragon (fresh) chopped finely
    1.5 Tbsp Chervil, chopped finely
    2 tsp Dijon Mustard
    1 tsp balsamic vinegar
    1 tsp shallot, minced
    2 shakes Worcestershire sauce
    Salt & Pepper to taste


Directions

In a medium sized pot, boil 4 beets in water for 1 hour. DO NOT drain water - reserve beet water. Save beets for something else or eat later.
In another medium pot bring 4 cups of water to a boil, reduce to simmer and cook eggs for 12 minutes. Allow to cool.
Peel hard boiled eggs, place in bowl and cover with beet water for 30 minutes.
Slice eggs in half lengthwise. Remove the yolks and transfer to a bowl. Reserve whites.
Add the Mayonaise, herbs Dijon mustard, balsamic vinegar, shallots and Worcestershire sauce to the yolks. Add salt & pepper to taste. Blend thoroughly with a fork.
Using a pastry bag or zip lock bag with a corner clipped 1/2 inch; pipe yoke mixturee back into egge whites.
May use a pastry tip for fancier effect.
Serve on decorated platter and enjoy.
