Jezwyn's Amazing Almond Pancakes

Introduction

A vamped-up choc coconut version of the typical low-carb almond pancakes. I serve mine with black cherries. Oh God yes. A vamped-up choc coconut version of the typical low-carb almond pancakes. I serve mine with black cherries. Oh God yes.
Number of Servings: 2

Ingredients

    1 cup almond flour
    1/4 cup shredded coconut
    2 tablespoons coconut oil
    2 eggs
    1/2 cup water
    15 grams chopped dark chocolate

    Optional - pinch of salt, dash of sweetener. Great served with real maple syrup, dark cherries, chopped strawberries, whipped cream, etc.

Directions

Combine dry ingredients, add wet ingredients, and mix well with a fork. Add extra water if mixture is too thick.


Put a little extra coconut oil in a frying pan, and heat.


Pour 1/4 mixture into pan and heat until bubbles form and pop, then flip. Cook for another minute and then serve.


Enjoy! Around 12g net carb for half the mixture, but could serve three or even four people easily.
