1 cup pearled barely
1 cup instant couscous
1 can of vegetable stock (this recipie uses swansons - you can find cans with lower sodium content)
2 oz oliveoil or other healthier cooking oil such as sunflower for an even healthier meal.
0.5 cup toasted and chopped pistachio
Meanwhile, toast the pistachios in a not-stick wok. Heat the wok first. Then add whole pistachios and toss constantly until toasted lightly.
Allow nuts to cool while tossing the barley and couscous mixture with the cooking oil. fluff while breaking up any lumps.
Transfer the couscous and barely mixture to a steamer basket lined with cooking parchement or baking paper. Steam for another 10-15 minutes to heat through.
Chop up the pistachios to desired coursness and stir into the couscous and barley mixture just before serving.
