1 block Tofu, cut into strips
1 cup Bread crumbs, seasoned
1 Egg, scrambled
1/2 cup Parmesan cheese, grated
Oil to fry
Cut tofu into finger sized strips and freeze overnight.
Dip in egg, followed by bread crumbs mixed with parmesan cheese. Pop into the fridge for a short while to 'set'.
Fry in shallow oil, or spray with cooking spray and bake in a hot oven until crispy and brown.
Serve with salsa or sweet chilli sauce.
