Roasted Veggies and Orzo

Number of Servings: 4

Ingredients

    4 oz uncooked orzo pasta
    2 cups red bell peppers, chopped
    2 cups zucchini sliced
    1 cup cherry tomatoes
    2 garlic cloves
    1 medium onion chopped
    1 Tbs olive oil
    1/2 cup feta cheese, crumbled
    1/2 fl oz lemon juice
    2 Tbs fresh basil, chopped
    salt and pepper

Directions

Preheat oven to 425

Place all cut veggies on a large cookie sheet, add oil, toss to coat the veggies. Season with salt and pepper and minced garlic. Roast in oven for 30 minutes, stirring often.

Cook orzo per bag instructions.

Drain orzo and place in a large bowl. Add feta and lemon juice. Toss together with roasted veggies. Add chopped basil.
