Mom's Potato Soup

Introduction

My mom used to make this for me when I was a kid. Her version used diced smoked ham, irish butter, and full fat heavy cream.
I still make it that way from time to time, but by and large I try to satisfy the craving with a lower calorie version that I can, literally, stuff myself sick with.

Ingredients

    4 Strips veggie bacon, any kind
    1 T Smart Balance
    1/2 cup fat free half and half
    4 cups of vegetable broth
    1 pound of any kind of potato, sliced kind of thin
    1-2 bunches of kale, chopped, stems removed
    1-2 bunches of green onion, chopped - separate white ends from green stems
    1 14 oz. can fat free condensed milk
    Red pepper, salt, pepper, any other seasoning you like - this soup is rather bland unless you dump copious seasonings in. Rosemary is delicious, I use red pepper flakes and tabasco.

Directions

Heat the smart balance in a large pot (the soup is made entirely in one pot, so make sure its a big one).
Sauté the white ends, saving the green stems for later, until fragrant.
Pour in vegetable broth and bring to a boil.
Put potatoes in, let cook until tender enough for a fork.
Add kale. Let it cook for about ten minutes.
Add remaining green onion, condensed milk, half and half and any seasonings you might want. Cook five minutes more.
That it. It tastes pretty good, and is all creamy and nice and get this - SERVES TWO.
You can eat it until you're sick.
