Mini baguette eggs

Introduction

I bought a mini baguette at the store yesterday, intending to have it for dinner, but we forgot about it. Not wanting to lose it, I decided to use for brunch today. I bought a mini baguette at the store yesterday, intending to have it for dinner, but we forgot about it. Not wanting to lose it, I decided to use for brunch today.
Number of Servings: 2

Ingredients

    1 Rosemary and olive oil mini baguette, cut in half, tops sliced off thinly.
    4 jumbo eggs
    1/2 tsp oregano
    1 oz part skim mozzarella

Directions

Preheat oven to 350 degrees. Scoop out center of each baguette half, leaving about a quarter to a half-inch wall all the way around. Break two eggs into each half, sprinkle with oregano and top with mozzarella. Bake at 350 for about 10 minutes, then broil to brown the cheese.

Makes two hearty servings. Serve with Mixed Fruit Brunch Compote.
