Low Cal Cornbread Muffins

Number of Servings: 12

Ingredients

    1 cup cornmeal
    1 cup skim milk
    1 cup flour
    1/2 cup grated cheddar cheese
    4 tsp baking powder
    2 eggs
    1/4 cup unsweetened applesauce

Directions

1. Combine the cormeal and milk, let stand for ten minutes
2. Preheat oven to 400 F.
3. In a separate bowl combine the other dry ingredients, mix well.
4. Add the eggs, cheese and applesauce to the cornmeal/milk mixture, mix well.
5. Add the dry ingredients to the cornmeal mixture. Stir until combined, do not overmix.
6. Fill greased muffin pan 2/3 full.
7. Bake at 400 F for 15 - 20 minutes.

Makes 12 muffins.
