Cottage Cheese Pudding

Introduction

The cottage cheese is the secret ingredient in this, nobody ever guesses whats in it!
An easily adaptable recipe, can be made with or without sugar, and with a variety of different fruits- fresh, canned or frozen.
Also good frozen on a hot summer day. Enjoy!

Number of Servings: 5

Ingredients

    1 cup cottage cheese
    1 cup canned pineapple (chunks or tidbits with juice)
    1/4 cup powdered sugar
    1/4 tub cool whip
    cocoa powder for dusting

Directions

Mix cottage cheese and 2-3 T fruit juice in blender until smooth.
Add just enough powdered sugar to make slightly sweet (will depend on taste and fruit used).
Fold in fruit pieces and cool whip.
Pour into serving dishes.
Dust with cocoa powder if desired.
Freeze or refrigerate until served.

Makes 5 generous 1/2 cup servings.
