Introduction

Ingredients

    3 cups (uncooked) elbow macaroni
    butter flavored cooking spray
    1/2 cup panko whole wheat bread crumbs
    1/4 cup all purpose flour
    1/2 teaspoon salt
    1 1/2 cup 1% milk
    one package reduced fat sharp cheddar cheese(i used kraft natural cheese made with 2% milk)
    6 ounces of reduced fat swiss cheese( i used sargento made with 2% milk slice swiss)


Directions

cook the macaroni according to box directions.
pre heat oven to 375.

lightly mist a 13 x 9 casserole dish (pyrex works great for this.) with cooking spray.

add the flour and salt to a medium bowl. slowly whisk in enough milk to form a paste. then continue adding the remaining milk, whisking as you do, making sure to remove any lumps.

transfer the milk mixture to a medium non stick saucepan and place the pan over medium heat. when the milk is warm, add the cheese and stir with a wooden spoon until the cheese is completely melted and the mixture thickens slightly.

stir in the maccaronni transfer the mixture in to your caserole dish sprinkle the bread crumbs over top and bake for 15 - 20 minutes or until the topping is lightly browned.

serves 12
