Grilled Veggie Tacos

Introduction

My Daughter (limelight) gave me this recipe to post. I figured its 6 weight watcher points
2 tacos each.

Number of Servings: 2

Ingredients

    1 large jalapeno, seeded & sliced into thin strips
    1 orange bell pepper (or red or yellow), seeded & sliced into thin strips
    1 poblano chili, seeded & sliced into thin strips
    1 medium zucchini, sliced into 1/4 to 1/2 in strips
    4 lg mushrooms, sliced
    1 medium Sliced onion
    whatever other veggies you like.
    5-10 sprays of cooking spray
    salt and pepper to taste
    lime juice (of 1 lime)
    4 corn tortillas warmed
    1/2 avocado
    2 T reduced fat sour cream
    salsa (as much as you like)


Directions

spray cooking spray on all the veggies. Grill on the BBQ or a grill pan, just until they get the grill marks, but you want them still crunchy. Put salt & pepper on the grilled veggies, drizzle lime juice over the grilled veggies. Serve in warm corn tortillas, garnish with fresh avocado & salsa & sour cream....YUM.
Makes 4 tacos 2 each.
