Vegetarian Chik'n and Broccoli Al Fredo

Introduction

A low-fat, vegetarian version this classic al fredo dish. Sure to please even the meat eaters in your family!

Ingredients

    1 Package Morning Star Chik'n Strips
    1 Head Broccoli
    1 tbsp Butter Spread
    2 cloves garlic, minced
    1 tbsp all-purpose flour
    1 1/2 cups fat-free milk
    1 cup shredded Parmesan cheese
    4 oz. reduced-fat cream cheese
    1 box dry fettuccine pasta
    1 Tbsp chopped fresh parsley
    Salt and pepper to taste

Directions

Clean and chop broccoli and set it to steam on the stovetop. Meanwhile, get your fettuccine cooking. Set up a small pan for the chik'n strips, but don't begin to cook yet.

Onto the sauce....

Melt butter in saucepan over medium heat. Add garlic and cook for 30 seconds. Stir in flour to make roux. Add milk, parmesan cheese, and cream cheese. Stir until all lumps disappear. Continue to cook until sauce thickens, then turn down heat to low. Add minced parsley and season to taste with salt and pepper.

Turn on heat to fry chik'n strips - use oil sparingly. Heat until crispy.

Drain pasta, and toss all ingredients together with sauce. Top with sprigs of parsley.
