Ingredients

5 boneless, skinless chicken breasts, cooked and diced
1 cup cider vinegar
1 cup brown sugar
1/2 cup ketchup
1/2 cup bell pepper
2 1/2 cup pineapple
1/4 cup pineapple juice
1 tbsp. cornstarch
Directions
Cook and dice chicken, dice pineapple, dice green peppers. Spray pan with olive oil spray, or use 1 tbsp. olive oil and saute green pepper. In small bowl combine vinegar, ketchup, cornstarch and abrown sugar. Add to green peppers. Bring mixture to a boil. Then add chicken, pineapple. Let thicken. Serve over rice. Makes 8 1-cup servings.
