Number of Servings: 9

Ingredients

    3 sml red potatoes diced
    2 med yellow squash diced
    2 med zucchini diced
    1 small white onion diced
    3 med jalapenos diced
    salt and pepper to taste
    olive oil to prevent sicking to pan

Directions

Mix well in 9" cassarole dish and bake at 425* until potatoes are tender
