Mexican Can Can Soup

Introduction

An everyday crockpot meal that is ready when you get home.

You can decide how spicy this is by using different types of salsa.

You can decide how spicy this is by using different types of salsa.

Number of Servings: 6

Ingredients

    1 can black beans
    1 can diced or crushed tomatoes
    1 can corn (can use frozen, just fill the black bean can to measure)
    1 jar salsa (or about 2 cups)
    1 can water (or about 1.5 cups)
    1 frozen boneless skinless chicken breast
    1 tbsp cumin
    1 cup fresh cilantro to garnish

Directions

Serves 6-8 for dinner

Put all ingredients except cilantro in a crockpot or slow cooker. Cook on Low all day.

Stir in chopped cilantro just before serving.

Can be topped with sour cream and/or cheddar cheese if desired.

As an alternative, can be vegetarian by removing the chicken breast.
