Top Banana Blueberry Bread

Introduction

This is an adapted recipe from Hungry Girl's 200 Under 200 Cookbook. In honor of my favorite blueberry-banana smoothie, I used blueberry-flavored applesauce and added a cup of blueberries to the mix. I had a small loaf pan, so I used that and put the rest of the batter in a muffin tin. It's DELISH!!!! This is an adapted recipe from Hungry Girl's 200 Under 200 Cookbook. Ingredients

    1 3/4 cup flour
    3/4 cup Splenda
    1 1/2 cup mashed ripe bananas (about 3 bananas)
    1/2 cup fat-free liquid egg substitute
    1/2 cup so-sugar-added Mott's Healthy Harvest applesauce Blueberry Delight
    2 tsp. baking powder
    1 tsp.vanilla extract
    1/2 tsp. cinnamon
    1/2 tsp. salt
    Optional Toppings: I Can't Believe It's Not Butter Spray, Cool Whip Free

Directions

Preheat oven to 350 degrees.
Mix wet items together in one bowl (except blueberries), dry items together in one bowl, then wet with dry until just moistened. Stir in blueberries. Spoon batter into a large loaf pan (9 by 5 inches) sprayed with nonstick spray. Bake for about 50 minutes or until knife inserted comes out clean.

Allow loaf to cool, then cut into 8 slices. Spritz with spray butter or spread whipped cream on.
