Veggie Fried Taters with Seitan

Introduction

Whip up this tasty breakfast hash with leftover baked potatoes, or ones you cooked in the microwave. Pre-baked potatoes means it takes less time to cook, and the potatoes come out browned but not still crunchy in the middle! Ingredients

    3 med. Yukon Gold Potatoes, baked & cubed
    6-10 baby Portabella Mushrooms, sliced
    1 lg Carrots, fresh, sliced
    1 Celery, raw, large stalk, sliced
    1/2 cup Zucchini, sliced
    1 med. Red Ripe Tomato, cut into wedges
    1/4 cup Onions, chopped
    2 cloves Garlic, minced
    1/2 c. Seitan, chicken-style by Westsoy, in small chunks (.5" or less)
    1/2 tsp Dill weed, dried
    1/4 tsp Thyme, ground
    1/3 tsp Oregano, ground
    1/8 tsp Coriander leaf, dried
    6-7 sprays Olive Oil Spray
    Salt & Pepper to taste
    2 Tbsp Water

Directions

Heat large frying pan on medium-high heat. Spray liberally with olive oil spray.

Saute onion and garlic for 1 minute, then add carrots and celery. Saute for 1 minute, then add water and cover to steam for 2-3 minutes. Add mushrooms and seitan. Spray liberally with olive oil spray, turn heat to high, and saute, stirring frequently, until browned (about 2 minutes). Add zucchini, diced potatoes, spices, and another spray of oil. Saute on high until browned. Toss in tomatoes and stir for 30-40 seconds.

Remove from heat and serve.
