Oven Fried Parmesan Chicken

Introduction

These come out very moist. I found this on the back of a grocery store ad and made a few changes. The original called for 2 tsp of Thyme, 1/4 c of Parmesan, & 2 c of cornflakes. I measured after I dipped and found I had a good 1/2 c of mixture left so I cut the recipe back accordingly.

* For those of you that are salt restricted- You might want to leave out the salt as there's probably enough in the Parmesan cheese. I just sprinkled a little salt over the bowl.

I also extended the cooking time. The original time was 20 mins.

Ingredients

    1 Egg white
    3 Tb Parmesan Cheese
    1 1/2 c Cornflakes, crushed
    1/4 tsp ea Salt & Black Pepper
    1 tsp dried Thyme
    4 bnls/skls Chicken Breasts

Directions

Preheat oven to 400 degrees F.
Beat egg white until frothy. In another bowl mix Parmesan cheese, cornflakes, salt, pepper, and Thyme. Dip each chicken piece in the egg white and then dip into the cornflakes mixture, patting well to ensure the mixture adheres to the chicken. Place the chicken on a lightly oil sprayed pan. Bake about 25 mins or until internal temperature reaches 165 degrees F.

    this was delicious. found i was out of corn flakes so i used rice krispies and it was still good. also added a few extra herbs. wonderful change from plain baked and grilled chicken. will keep this one in menu plan. works well with weight watchers too. - 6/7/09

    I used finely chopped parsley as my herb and the zest of a lemon. Mix this well with the C/Flakes and it was to die for especially when I baked a few whole garlic cloves with the chicken for the sweetness. Very nice indeed served with Vegtables of your choice. - 6/13/09

    This was really good, and I was shocked to watch my snobby husband but away two half-breasts. It was only afterward that I told them the crispy coating was corn flakes (actually Total...). I had to make a double-batch of the coating, added garlic powder and cayenne pepper. Really good. - 6/13/09

    Loved it! I used frozen chicken breasts, boiled slightly to thaw. They came out a bit crispy after 25 minutes, but still very delicious! Next time I will bake them for a shorter period of time. - 5/27/09

  • TASTY but some of the flakes burned out!I don't know if it is because the maximum temperature of my oven is 300 degrees F so I had to keep the chicken in the oven for more than 25min.I guess next time I will boil the chicken a little to prepare it for this recipe.Healthy and delicious thoguh! - 9/17/12

  • I loved it but I made a few changes. I added garlic and Italian seasoning. I took 1/2 the corn flakes and make it into a flour consistency and the other half I made small flakes. And I pan fried them in a little olive oil pan. They tasted great. - 11/29/09

  • Instead of using the egg I use 1% milk to soak the chicken in for about 15 minutes...still just as moist, but less fat. I don't use any salt, but plenty of pepper. I also used red pepper flakes for a little kick! My family absolutly loves this recipe! - 7/14/09

  • This is my favorite recipe, I have made this 5-6 times so far... I can usually squeeze 6-8 breasts out of this mixture and save what ever isn't eaten for the weak!..   • I had a whole bunch of crumbs (I used italian breadcrumbs) and some egg whites left, so I mixed some crumbs in the egg and then dropped them on a hot pan for a few minutes, then flipped it and left it for a few more minutes.
