Oven Fried Parmesan Chicken

These come out very moist. I found this on the back of a grocery store ad and made a few changes. The original called for 2 tsp of Thyme, 1/4 c of Parmesan, & 2 c of cornflakes. I measured after I dipped and found I had a good 1/2 c of mixture left so I cut the recipe back accordingly.* For those of you that are salt restricted- You might want to leave out the salt as there's probably enough in the Parmesan cheese. I just sprinkled a little salt over the bowl.
I also extended the cooking time. The original time was 20 mins. These come out very moist. I found this on the back of a grocery store ad and made a few changes. Ingredients

1 Egg white
3 Tb Parmesan Cheese
1 1/2 c Cornflakes, crushed
1/4 tsp ea Salt & Black Pepper
1 tsp dried Thyme
4 bnls/skls Chicken Breasts
Directions
Preheat oven to 400 degrees F.
Beat egg white until frothy. In another bowl mix Parmesan cheese, cornflakes, salt, pepper, and Thyme. Dip each chicken piece in the egg white and then dip into the cornflakes mixture, patting well to ensure the mixture adheres to the chicken. Place the chicken on a lightly oil sprayed pan. Bake about 25 mins or until internal temperature reaches 165 degrees F.

TASTY but some of the flakes burned out!I don't know if it is because the maximum temperature of my oven is 300 degrees F so I had to keep the chicken in the oven for more than 25min.I guess next time I will boil the chicken a little to prepare it for this recipe.Healthy and delicious thoguh! - 9/17/12

I was making this for myself so I cut the recipe in half and it turned out wonderful. I added garlic powder and some Mrs. Dash no sodium and it was better than any Chicken Parm I've had in a restaurant. I am fairly inexperienced with cooking and this was very easy. I will def. make this again =) - 6/21/10

I fixed this for my family this week, and the kids have requested it for a meal next week. I used Bran Flakes instead of the corn flakes. I also added more spices just because I usually do when I'm cooking and they all loved it. My husband doesn't usually like chicken breast meat, but he did this. - 1/23/10

This is my favorite recipe, I have made this 5-6 times so far... I can usually squeeze 6-8 breasts out of this mixture and save what ever isn't eaten for the weak!.. Once I was out of parmesan so i added some more spice and some savory and it was just as good and even a tad better for you ! - 7/6/09

I had a whole bunch of crumbs (I used italian breadcrumbs) and some egg whites left, so I mixed some crumbs in the egg and then dropped them on a hot pan for a few minutes, then flipped it and left it for a few more minutes. When it came off the pan it was a delicious little italian fritter thing. - 6/24/09
