Frozen pie crust(2)
3 chicken breasts
1/2 cup flour
12 oz. can evaporated fat free milk
1 bag frozen mixed veggies(carrots, corn, green beans)
1 tbsp olive oil
salt and pepper to taste

This was a fairly simple & tasty rendition of chicken pot pie. I saved the water I boiled the chicken in and added back some of that liquid to the filling. As it turns out, I should have added it all back it to make the inside a little more creamy. It was a little thick, but still quite good. - 12/12/12
