Molasses-Oat Banana Nut Bread

Introduction

I got this recipe out of Cooking Light Magazine, it was submitted by Jean Patterson, a freelance food writer. I added the nuts, because it has to be banana nut bread, not just banana, to give you a homey feeling. I also substituted applesauce for margerine. Number of Servings: 14

Ingredients

    whole wheat flour
    oats
    baking soda
    cinnamon
    splenda
    lowfat margerine or applesauce
    molasses
    egg substitute
    banana ( about 2)
    plain nonfat yougart
    vanilla extract
    cooking spray

Directions

Preheat oven to 350 degrees
lightly spoon flour into dry measuring cup, level with a knife.
combine oats, baking soda, flour, cinnamon, stir with wihisk until blended.
Place splenda, apple sauce, and molasses in a large bowl and beat until well blended.
Add egg substitute, blend well.
Add banana, yougart, and vanilla; beat until well blended.
Add flour mixture and beat until moist.
Spoon batter into a cookin sparay coated loaf pan.
Bake for an hour and 5 mins or until the toothpick test works.
Cool 10 minutes, remove from pan.

1 loaf- cut into 14 slices.
