Introduction

Ingredients

    3 cans Black beans, drained
    2 cans Shoepeg corn (white corn), drained
    2 cans tomatoes with green chilis, undrained
    1 finely chopped fresh jalapeno pepper, or to taste—optional
    2 bell peppers—colored are great
    Diced red onion
    half a bunch cilantro, chopped fine
    ¼ c. red wine vinegar
    ½ t. cumin
    juice from 1 fresh lemon
    Hot pepper sauce - to taste

Directions

Mix and chill well. Serve as a bean salad or with tortilla chips as a salsa/dip.
