Herbed Pork Tenderloin

Number of Servings: 8

Ingredients

    1 T Rosemary
    1 T parsley
    1/4 t garlic powder
    1/4 t salt
    1/4 t black pepper
    1/8 t ground red pepper
    2 1/2 pound pork tenderloin
    2 t extra virgin olive oil

Directions

Preheat the oven to 350. In small bowl, mix the rosemary, parsley, garlic powder, salt, black and red pepper. Rub the roast wit the olive oil and the herbs. Let stand 15 min.

Sear tenderloin on all sides. Put in oven for 30-35 min, until thermometer inserted in center reaches 158. Tent with foil and let stand for 10 min. Slice into thin slices. Pour pan juices over roast.
