1 Cup Flour 1/4 Cup Confectioner's Sugar 1/2 Cup Smart Balance Buttery Spread 2 Large Eggs 1 Cup Sugar 1/2 tsp Baking Powder 2 TBS Lemon Juice
Blend flour (sifted), Confectioner's sugar and butter. Press into 8x8x2 pan and bake at 350 for 20 minutes. Blend eggs, sugar, baking powder & lemon juice. Add to crust and bake additional 20 minutes (do not overbake). Let cool and sprinkle with additional confectioner's sugar.
