Introduction

Excellent over pasta or polenta. Excellent over pasta or polenta.

Ingredients

    Crimini mushrooms
    Zucchini
    Eggplant
    Sweet Potatoes
    Broccoli

Directions

Lightly coat cookie sheet with Olive Oil Cooking Spray. Spread vegetables onto tray, add pinch salt and herbs of choice. Roast 425 degrres for 15 minutes...turn veggies over and roast additional 15 minutes. Watch carefully at end, broccoli and sweet potatoes will burn!
