Grilled Greek Potato Salad

Number of Servings: 4

Ingredients

    1 1/2 pounds red potatoes, sliced
    3 T olive oil, separated
    1 1/2 tsp greek seasoning
    1 medium yellow pepper, chopped
    1 medium orange (or red) pepper, chopped*
    1/2 medium red onion, sliced
    1 medium cucumber, chopped
    1 1/2 C grape or cherry tomatoes, halved
    1 package of Trader Joe's fat free Feta
    1/4 C red wine vinegar
    1 1/2 T Blue Agave Sweetener or honey (optional)
    1/2 C kalamata olives, chopped
    2 T fresha oregano, chopped

    * The color mix of the salad is especially nice with the orange peppers.

Directions

Preheat grill to Medium. Slice red potatoes into wedges and place in aluminum pan. Drizzle 1 tablespoon of olive oil and sprinkle with greek seasoning; toss to coat. Grill potatoes, covered, until crisp tender; about 20-25 minutes. Let cool slightly.

While potatoes are cooking, combine peppers, onions, cucumber, tomatoes, olives and oregano in a large bowl. Combine remaining olive oil and red wine vinegar. If dressing is too tart, add the agave sweetener.

Add potatoes, feta, and dressing to vegetables. Toss to coat. Can be served warm or cold. Serves 4-6 generously. Excellent with simple grilled chicken.
