Chicken and Mushroom Skillet

Introduction

From a Canadian Living cookbook. Made it for dinner tonite, and I'd make it again! There was lemon zest in the original that I've omitted b/c for me it was the only thing I didn't like about it. Ingredients

    2 lb chicken thighs
    1/4 cup flour
    2 tbsp butter
    1 1/2 cups sliced mushrooms
    1 carrot, chopped
    3 cloves garlic, minced
    2 tbsp chopped fresh thyme or 2 tsp dried
    1 tsp each salt and pepper , or to taste
    1 cup chicken stock
    1/4 cup sour cream

Directions

Makes six servings.

in plastic bag, shake chken with 3 tbsp of the flour. In nonstick skillet, melt butter over medium hihg heat; cook chicken for 15 to 02 min or until well browned on all sides and juices run clear when chicken is pierced. Remove to plate.

Drain off fat from skilllet. Add everything but the remaining flour and chicken stock; cook over medium heat, stirring occasionally, for about 10 min or until mushrooms are browned.

Whisk the last tbsp flour into stock; pour into pan and cook, stirring to scrape up brown bitts, for 1 to 2 minutes or until thickened. Reduce heat to medium low; stir in sour cream. Return chicken to pan; cook, without boiling, for 5 minutes or until heated through.
