Black Bean, Corn, & Quinoa Salad

Introduction

Number of Servings: 6

Ingredients

    1-1/2 c black beans, rinsed (1 can)
    1 c grilled corn (1 ear)
    1/2 c celery, chopped
    1 c carrots, chopped
    2-1/2 c quinoa, cooked (1/2 c dry)

Directions

Mix ingredients together. Serve 1 cup over salad greens. Use the dressing of your choice. A lemon juice and olive oil is good.

Makes 6 generous 1-cup servings
