Salsa Rice Salad

Ingredients

    4 c cooked rice
    1/4 c green onion, chopped
    1 can whole kernel corn, drained
    1 can mushrooms, drained
    1 tsp parsley
    2 Tbsp lime juice
    2 Tbsp canola oil
    1/2 tsp cumin
    1/8 tsp cayenne pepper
    1/2 cup salsa

Directions

1. Combine rice, vegetables, and green onion in a large bowl.
2. Whisk the other ingredients together in a small bowl.
3. Drizzle over rice mixture and toss lightly.
Makes 8 servings
