Introduction

I love this grilled mushroom sandwich in the summer. When the weather is bad, you can make it in a skillet. I love this grilled mushroom sandwich in the summer. When the weather is bad, you can make it in a skillet.
Number of Servings: 1

Ingredients

    1 portabella mushroom
    2 Tbsp Ken's Steakhouse Balsamic and Basil Vinaigrette
    1 cup fresh spinach
    1/2 cup of diced cucumber
    1 Diced Roma pr Plum Tomato
    1/4 cup crimbled feta cheese
    1 whole wheat pita
    red leaf lettuce

Directions

Clean the mushroom and brush with the Balsamic and Basil Vinaigrette. Grill on both sides about 5-6 minutes each side, until tender. If you prefer, you can also cook the mushroom on the stove top. Toast the pita. Serve the mushroom on or in the pita, and top with spinach, tomato, cucumber, lettuce, feta and the remaining dressing.
