Introduction

This one pot meal is full of whole grains and vegetables. I sometimes add a can of kidney beans or diced tomatoes. The servings are pretty big so you may find you want to reduce the serving size. Number of Servings: 6

Ingredients

    1 tbsp olive oil
    1 large onion
    1 lb 91% lean ground beef
    4 tsp minced garlic
    1 lb fresh mushrooms, chopped
    1 lb bag of frozen mixed bell pepper strips
    20 oz bag frozen chopped spinach
    1.5 cups uncooked bulgur
    3 cups beef broth

Directions

Heat the oil in a large soup pot or dutch oven
Chop onion, adding to oil as you chop
Add the garlic, mushrooms, and ground beef
When the beef starts to brown, stiir in the bell pepper strips.
Cook, stirring occasionally until the beef is browned
Add the broth, bulgur, and spinach - bring to a boil
Cover and turn off the heat
Let sit for 10-15 minutes (enough time to make a salad or set the table!)

Makes 6 approximately 2 cup servings
