1/4 c shredded cheddar cheese
2.5 ripe tomatoes - 2 roasted
1 1/3 c morning star soy crumbles
1/4 c chopped onion
juice of half a lemon
juice of half a lime
2 cloves garlic, roasted
2 jalapeno - roasted
1 medium avadado
4 small mission flour tortillas
dash of cumin
dash of garlic powder
salt and pepper to taste
First, roast your tomatoes, jalapenos, onion, and garlic. Place all in food processor with lime juice, salt and pepper, and a dash of cumin. Salsa!!
Second, mash avacado, and combine with half a tomato, half a jalapeno, garlic powder, salt, pepper, and lemon juice. Guacamole!!
Third, heat soy crumbles in a pan over medium heat.
Fourth, heat tortillas over flame if you have a gas stove, or in microwave for 10 seconds.
Serve 1/3 c soy crumbles, and 1 Tbsp. cheese per tortilla. Eat up to a cup of salsa and half the guacamole to meet the nutritional stats per serving.
