Bran Muffins

Introduction

I love these for breakfast on the run, or just when I dont feel like cooking. They are low in calories, even whith white flour they arent bad. I of course cut the sugar to 1/4 cup, but this recipe is calculated at the 1/2 cup measuring. I got this from 'La Dolce Vegan" by Sarah Kramer.
Great with morning coffee or tea.

Ingredients

    1 1/3 cup flour
    1 cup wheat bran
    1/2 cup sugar
    1 tsp baking soda
    1/8 tsp salt
    1 1/4 cup "milk"
    1/4 cup applesauce (unsweetened)
    2 TBSP ground flax seed
    2 TBSP oil
    ! tsp vanilla extract
    1/4 cup raisins ( or other dried fruit)
    1/4 cup sunflower seeds

Directions

Preheat oven to 350. Lightly oil muffin tins or use inserts. In a large bowl, mix together flour, bran, sugar, baking soda, and salt. Stir in "milk", applesauce, flax seeds, oil, vanilla, rasins, and sunflower seeds and stir together gently until just mixed. Spoon evenly into muffin cups and bake for 25-30 minutes or until toothpick comes out clean. Cool completely before removing from tinss. Makes 12 muffins.
