Mediterranean Couscous

Introduction

Number of Servings: 8

Ingredients

    1 can chicken broth
    3/4 c couscous, uncooked
    3/4c grape tomatoes, halved
    3/4 c cucumbers, chopped
    1/4c green onions, diced
    8-10 Calamata olives, diced
    1/2c feta cheese
    1/2 tsp lemon rind
    2 Tbsp Lemon juice (fresh is best!)
    1/2 tsp salt
    1/2 tsp pepper

Directions

1. Bring chicken broth to a boil and add couscous. Cook for time on packaging.
2. In a salad bowl, combine all other ingredients, except feta.
3. Allow couscous to cool slightly then add to bowl. 4. Chill in fridge. Before serving, add feta and mix.

*Makes about 6 -1 cup servings
