I always knew this as honey cake, but I love it either way. Plus, it is fat free. It is rather chewy compared to quick breads that typically have at least a quarter cup of fat. I always knew this as honey cake, but I love it either way. Plus, it is fat free. It is rather chewy compared to quick breads that typically have at least a quarter cup of fat.
Number of Servings: 12

Ingredients

    Flour, baking powder, baking soda, salt, ginger, cinnamon, eggs, milk, honey

Directions

Heat oven to 350F. SIft the dry ingredients into the bowl of an electric mixer.
Beat the egg and add the milk and honey to the egg. Beat egg, milk, and honey together.
Add the egg mixture to the dry ingredients and beat well for at least 15 minutes, but preferably 30.
Spray non-stick cooking spray on an 8 inch loaf pan.
Pour the batter in the pan.
Bake 40-50 minutes. The loaf will be puffed and golden.

This can also be made as 6-8 muffins if you decrease the baking time by 10-15 minutes.
