Recipe tastes great, much better than the name would lead you to believe. Excellent idea for portion control and as one batch is enough for several meals, its a great time saver as well. Paired with a salad (mustard vinagrette topped) this is an outstanding light summer meal. - 6/11/09

Being a fan of the regular meat loaf muffins made me want to try this recipe. It's great! These contain more of the things I should be eating and less of the bad. Great healthy spin and can't beat the Fiber. - 6/9/09

  • I love this recipe. Mainly for the easy, preparation of lunchs, by popping one of these in. I do want to figure out why it was on the dry side. I may have cooked too long? Either way, it was a tasty treat! And my cats, were standing by for any dropped crumbs. - 6/24/09
