Turkey Gyros

Ingredients

Gyro Meat Mixture:
1 lb. 93% lean ground turkey
1 clove of garlic, minced
1/2 of a small onion, grated or finely minced
2 T dried parsley (use fresh is you like)
1T dried italian seasoning
salt & pepper to taste
Tzatziki Sauce:
6 oz. fat free plain yogurt
1/4 english (seedless) cucumber, finely diced
1 T dried parsley (use fresh if you like)
salt & pepper to taste
Other ingredients:
4 Toufayan Whole Wheat Pitas (or 8 pitettes)
1/4 english cucumber, thinly sliced in rounds
1 small tomatoe, thinly sliced in rounds
Directions
Makes 4 servings.
Preheat your oven to 500 degrees.
In a mixing bowl combine ingredients for the gyro meat mixture. Stir vigorously....and I mean vigorously for about one minute until combine. This helps the meat proteins combine which makes it easy to slice thinly just like the real gyros!!!
In a non-stick oven proof skillet heat the olive oil on med-high heat. While the olive is heating up - take the meat mixture and form four individual mini rectangular meatloafs. About 1/4 thick. Saute' them for about 2-3 minutes on each side and then finish them in the preheated oven for 8-10 minutes until the inside is cooked through (about 165 degrees).
While the loaves are cooking combine the ingredients for your tzatziki sauce in a small bowl. (This could be done first in order to let the flavors combine a bit longer. Depending on how much sauce you like on your gyro this makes plenty of sauce for another 4 servings if desired)
When the mini loaves are cooked through slice each loaf lengthwise and serve inside a whole wheat pita with 1-2 T of the tzatzicki sauce along with cucumber and tomatoe rounds.
