Texas Baked Chicken

Introduction

Ingredients

    3 ounces cooked chicken breast with no skin, shredded
    1 small potato, peeled and thinly sliced
    1 large carrot, peeled and thinly sliced into coins
    1/2 cup finely chopped onion
    1/4 cup healthy request cream of chicken soup
    1/4 cup water
    Garlic Salt to taste
    pepper to taste

Directions

In a small sprayed baking dish layer half of the potato, half of the carrot, half of the onion. Sprinkle with garlic salt and pepper. Repeat layers with remaining potatoes, carrots and onion. Add more garlic and pepper if you like ( I love lots of garlic!).

Heat cooked chicken, soup and water in a small pan till warmed through.

Pour over potato/carrot/onion mixture. Cover and bake for about 50 minutes or until potatoes are tender when poked with a fork.
