Mexican Casserole

Introduction

A casserole with brown rice, chicken, lots of veggies and beans. A casserole with brown rice, chicken, lots of veggies and beans.
Number of Servings: 4

Ingredients

    1 3/4 water
    2 cups instant brown rice
    1 1/2 stalks of celery, chopped
    1 medium carrot ,chopped
    1/2 bell pepper, chopped
    1 cup sweet corn (frozen or fresh)
    1 chicken breast, cut into pieces
    1/3 cup salsa
    1/2 packet taco seasoning
    1/2 can kidney beans, drained and rinsed

Directions

Sprinkle celery, carrots and pepper lightly with taco seasoning (don't use all of it), saute lightly. Add beans. Warm. Place in casserole dish. Saute chicken in same pan, sprinkle with more taco seasoning. Mix corn, chicken and salsa with the veggies and beans. Stir in water and brown rice. Bake at 400 until the rice is done. Add cheese if desired.
