Spicy Potato Tomato Soup

Introduction

Ingredients

    1 pound extra lean ground beef
    2 medium onions, chopped
    15 1/2 ounce can of no salt diced tomatoes
    15 1/2 ounce can tomato sauce
    25 ounces potatoes, peeled and diced
    1 quart of water
    1/2 teaspoon black pepper
    1/4 teaspoon cayenne pepper
    1/4 teaspoon kosher salt
    6 dashes of tobasco sauce (or to taste)

Directions

1. In a large frying pan, brown the ground beef, breaking it up into crumbles as it cooks. Drain off any fat.


2. In a large soup pot combine all of the ingredients, including the drained cooked meat. Bring to a boil, reduce heat and simmer for one hour or until the potatoes are just cooked (the prieces break apart when pierced with a fork, but not so much that they are mushy and become mashed potatoes).


Makes six 1 1/4 cup servings.
